Low Carb Spinach Alfredo Chicken Pizza

If you are anything like me, you are absolutely obsessed with pizza. I love gourmet pizza, delivery pizza, even the $1.00 Totino's party pizza. It doesn't matter where it is from, pizza is just SO GOOD! It is so good that I've even found myself wishing that my pillows were made of pizza rolls. Weird, I know.

Aside from my pizza dreams, one of my New Year's resolutions was to become healthy & fit, so I had to ditch my favorite food and find a new alternative. After several months of living pizza free, I came across a recipe for spinach crusted pizza and thought to myself, "there is no way that can be easy or good." I was wrong. It is both of those words and much more.
Follow this super simple recipe and find out for yourself.
You will need:
Parchment paper
2 cups of fresh spinach
1 egg
1 cup of Italian blend cheese
1/8 tsp garlic
Salt & pepper
1/4 cup roasted garlic parmesan alfredo sauce
1 tbs basil pesto spread
1 tbs sun dried tomato pesto spread
1/2 medium tomato
1 shredded chicken breast
1. Preheat the oven to 425 degrees.
2. While the oven is preheating. Gather your spinach, egg, cheese, and garlic.

First, blend together the spinach and egg until it has made a baby food like texture.
If you have this blender from Wal-Mart I feel your pain because it is awful.

Now add the cheese and garlic and blend until paste like.


3. Now that you have successfully made your carb free crust, spread evenly on a layer of parchment paper. **DO NOT SKIP THE PARCHMENT PAPER
The mixture may not look like a lot but keep spreading. It is more than you think.

4. Once your mixture is evenly spread, pop it in the oven for 20 minutes or until edges are brown.

5. There are a lot of different sauces you can make for this pizza, but I love the taste of this sauce on the spinach. Combine 1/4 cup of alfredo sauce, 1 tbs. of pesto, 1 tbs. of sun dried tomato pesto, and half a tomato in a food processor. Blend until smooth. Easy enough, right?!

6. For the toppings you can use anything. I've used canadian bacon, turkey, pepperoni, and even canned chicken that suprisingly tasted delicious. For this recipe I used 1 pre-cooked shredded chicken breast.
7. Once the timer has stopped, spread a layer of the sauce on the pizza. You should have plenty to go around! Top the pizza with the chicken, add a dash of cheese, spinach leaves, and tomatoes for a colorful finish.

8. Bake for 10 more minutes and season with salt & pepper.

9. VOILA! You have a delicious spinach crust alfredo chicken pizza. The ENTIRE pizza is less than 15 carbs, which means it is basically air. You can eat the entire thing and feel zero guilt as you lay on the couch softly sobbing and binge watching reruns of The Mindy Project all weekend.
