Parmesan Almond Crusted Chicken

If you know anything about me you know that a.) I’m forever obsessed with anything parmesan and b.) I am constantly snacking on almonds. Well, if you’ve read any of my other posts over the past few months you know that one of my New Year’s Resolutions was to become healthy and fit. That meant kissing good ol’ Popeye’s fried chicken goodbye. After eating countless grilled chicken breasts I came across a few recipes for almond crusted chicken online and decided to try a few myself. I think it’s safe to say that I fell in love with this dish! It’s extremely easy and versatile. You can also use this technique for tilapia, other meats, and even salad toppings.
What you’ll need:
Thin sliced boneless skinless chicken breast
Parmesan cheese shavings
Almonds (salted or unsalted)
Olive oil
Parchment paper

First, preheat the oven to 350 degrees. While the oven is preheating, measure ⅔ cup of almonds and place them into a food processor. I got this food processor for $8 and it was probably one of the best "investments" I’ve ever made. Blend the almonds until finely grated.


Next, add ½ cup of shaved parmesan to the almonds and blend away!


Now that you have your mixture blended and ready, pour 3 tbsp. of olive oil in a bowl. Coat your chicken breast in the oil and then place on a separate plate.

After the chicken has been coated in oil, sprinkle the parmesan and almond mix onto the chicken and spread evenly.

Once all of the breasts have been coated, place on parchment paper and bake for about 30-35 minutes or until tender.

And there you have it! Parmesan almond crusted chicken that is so delicious you will never want to eat anything else. The best part about this meal is that it is low carb so if you’re trying to cut back, it’s a perfect dinner treat. (**not low calorie)
